A new take on Grilled Cheese

I love Sunday morning breakfast. You get to eat something a little more special than you would Monday-Saturday. I didn't feel like making the traditional bacon and eggs so I decided to make a fancier version of Grilled Cheese using spinach, bacon and oven baked tomatoes. If turned out great! Easy to make, and very filling. My man-friend Terrill ate two...of course.

What you will need :

Bread -Any kind
Butter
Tomato
Cheese ( I used marble and pepper jack)
Parmesan Cheese (grated)
Garlic (I used the chopped kind you buy in a jar)
Baby Spinach
Bacon


Cook the bacon. I cooked it in the oven on a cookie sheet at 375 until it was crisp. While the bacon is cooking, cut the tomato into thicker slices and place on another cookie sheet lined with parchment paper. Spread some garlic on the tomato and then top with the parmesan and the pepper jack cheese. Put in the oven using the top rack (the bacon was cooking on the lower rack). Bake until the cheese is bubbly. Heat up the frying pan or grill. Butter one side of the bread like you would when making regular grilled cheese. Place the bread butter side down in the pan. Spread on some more garlic, then top with the spinach, marble cheese, bacon and the oven tomatoes. Put the second piece of bread butter side up and cook on medium-high until the underside of the sandwich is browned. Flip the sandwich and cook the other side until its browned as well. The cheese should be melted by this time. Cut and serve.
