Hello Loves,
A couple of weeks ago I went to a
friends house for dinner and she put on quite a spread! Everything was
FAB. Even though I have taken up a more Vegan lifestyle, this Blue
Cheese, Walnut and Endive Salad has since become one of my favorite
things to eat. It's quick, easy and super tasty. Even the Hubs loves it
and he HATES Blue Cheese!
Now my amiga made this a bit different, but I worked with what I had in the fridge and pantry.
You will need:
Blue Cheese
Walnuts (chopped)
Red Wine Vinegar
Olive Oil
Endive (washed, ends cut off and leaves pulled apart)
No
measurements folks! I start with the walnuts. Chop them up and throw
them in a bowl with whatever amount of blue cheese you want. Then add a
dash or olive oil and a some red wine vinegar. Then mix it all up until
the cheese has mixed with the oil and vinegar.
Lay the endive leaves on a plate in a sun pattern, then spoon the cheese mixture into the middle.

Avocado Pasta
Hello lovelies!
Merry Christmas Eve Eve! Quick recipe post today. This is as far off from a "Christmas" meal as you can get. But it's tasty and oh so good for you. The Hubs actually hates avocado (crazy I know) so I had to make the sauce without him seeing the ingredient. I knew that if he saw the avocados, he wouldn't want to eat it. Tricky lady. Best part about it... It's VEGAN!!! The original recipe can be foudn here.
Here is what you will need:
3 smaller ripe avocados
4 garlic cloves
Tablespoon of chilli paste
2 Tablespoons of basil paste
Sea Salt
Fresh ground black pepper
1-2 Tablespoons lemon juice
Handful of spinach
1/2 Tablespoon Italian seasoning
Olive oil
Water
Noodles - I used brown rice and spinach noodles
Throw all the ingredients in a food processor or blender. Mix until smooth.
Cook your noodles and drain. Once you drain the noodles, put them back in the pot and add the sauce. I added a bit more of the seasonings to taste. Voila!

Black Magic
I hope everyone had a great weekend! I know I sure did.
Friday night I went to the Fergus Theatre to see their production of Miracle on 34th St with some wonderful coworkers. We had some dinner, then on to the show. It finally put me in the Christmas mood. It was a really great night full of laughs.
Saturday was sooo busy. I started off with a massage ( a pretty good way to start a weekend). Then we were off to a first birthday party for one of my fave little girlies. After that we had Terrill's work Christmas party.
I really love my outfit. I actually didn't know what I was going to wear until about 45 mins before we had to be there! Luckily it turned out. I got a lot of compliments on the clothes, shoes and hair. I bought the tulle skirt on EBay in September for $11.00. I bought it in 3 colours because they were so cheap. The bow tie was a last minute addition, but I'm glad I did! It added a little something-something I think.

Broccoli Salad (vegan and regular)
Hi Dolls!!
I made this broccoli salad for dinner yesterday. It was so good. I made two versions, vegan and non vegan. I think this will become a regular for us. Broccoli is a power food by the way. So eat it! Lot's of it :P
You will need for the regular version:
1 large bunch broccoli chopped into bite size pieces.
1 small red onion or 1/4 cup chopped
8 bacon strips cooked and crumbled. 6 if you are using turkey bacon.
1 cup of shredded cheddar cheese
1/2 cup sunflower seeds
1/2 cup raisins - you can use dried cranberries as well
1/2 cup of mayo
2 tbps of sugar or sugar substitute
1 tbps apple cider vinegar
Mix the mayo, vinegar and sugar together until smooth. Throw all the other ingredients in a bowl and toss. Add the dressing and stir until everything is coated.
Vegan version you omit the bacon and cheese. I used my home made veganaise instead of mayo. When I made the dressing, I used Agave syrup instead of sugar. I only used a little bit because its really sweet.
Enjoy!

Home Made Veganaise

Quick post on how to make your own Vegan Mayo. I went to the grocery store today to actually buy some Veganaise, but it was $6.00 for a small jar! No way was I going to spend that when I can make my own (Mum, are you seeing this?!)
I found a recipe here, and it looked easy enough. I also had all the ingredients. It turned out really good! I'm pretty impressed, I was concerned that I wouldn't like it. You can use this in place of mayo in wherever you would like. I'll be making this often for sure.
What you will need:
Ingredients:
½ cup of soy milk, plain and preferably unsweetened
1 cup plus 2 tablespoons of canola oil
¼ teaspoon of apple cider vinegar
¼ teaspoon of agave syrup
¾ teaspoon of kosher salt
½ tablespoon of fresh lemon juice
zest from 1/8 of an organic lemon
1/8 teaspoon of dry mustard
Place all ingredients in the blender for about 30 seconds or until you have a mayo-like consistency. This recipe makes about 1.5 cups.
I used most of it in broccoli salad that I will share tomorrow. The rest I put in a container for later. According to the recipe creator, it should last in the fridge for a couple of weeks. I did have some of it on a sandwich. I used flax and quinoa bread, tomato, parsley and tempeh bacon.

Black and White Wiener Dogs
I really loved my outfit today. Actually my girl Lauren at work came up to me and said "you have to blog about his outfit!" She read my mind!
The button up is super cute eh?! The print is Wiener Dogs, you can't not like it! I picked this up in the US the other weekend. It's from Kmart of all places. I also loved the gold buttons. It's all in the details!
My hair was still looking pretty good after the curls were slept on so I just went with it. A little French braid across my bangs changed it up just enough I think. Plus it kept it out of my face.
I threw in the picture of the omelet because its what I had for dinner. It was really good! I sautéed some mushrooms, red onion, garlic, tomato and a ton of spinach then threw it in the omelet with some dill cream cheese. Soooo good!
I'm off to walk my girls now, then I think I'll do some yoga.

Monday, Monday
Wow today flew by! Kind of a good thing, since nobody wants Monday to drag. This is probably the most basic of outfits but I really love it!
I did a little thrifting on Saturday at the Good Will. I picked up these wide leg dress pants for $7! They were brand new tags on. Price tag said $50 from Reitmans. My shoes are a "get well soon" present I bought my self. I've wanted them for ages. Aren't the the most!! To say the least;) The necklace was given to me by my mums bestie. They are always thifting and she came across this little gem. She said it was chunky and weird so I would love it! Haha I can't argue with that!
My hair is curled with a curling iron. I might do a tutorial soon since I get asked all the time how I do it. I just have to figure out how to do a video hehe.

Week 2 Results!!
Hello My Lovelies!
Official weigh in results for week 2 - down 11.4 lbs! Woohoo!
I'm feeling pretty good, my skin is getting clearer and clearer by the day. I seem to have a lot of energy during the day. I've been getting up early and taking my baby girls for walks, then again at night.
I had some more blood work done yesterday and I have to go back again on Friday next week. Hopefully this will be the last for a while. At least until February when I have to have a series of other tests done.
I'm heading out for lunch with my hubs, the mother in law and the grandma inlaw.
Tonight I'm out for a girls night. Some many beautiful ladies all in one place. It's going to be wonderful.

Couple of things.
1) My detox is still going strong. I think I will continue for another week and see how it goes from there. I've lost a few more pounds, I'll post the weeks total tomorrow when I weigh in. I feel pretty good:)
2) Quick outfit post. It was dress down day at work today. I wore this amazing chambray shirt with the bleached bottoms and white hearts. I love a plain denim shirt, but this was too fun to pass up! And who do we see poking out from underneath?! Yup! It's Kelly Kapowski!! I've wanted a shirt with her face on it for a while, and I came across this one last weekend. If they had a Zack Morris or and A.C Slater shirt I would have bought all three!!

Let's Keep Going
Hello Dolls!
Things are going ok. I had a little set back with the whole health thing. The issue I have been having reared its ugly head again. I was urgently called into see the doctor on Friday as they were concerned for my health. I had more blood work done and yet another ultra sound. I have to go back in 2 months for more tests and such. It's hard to get over something when you keep getting pulled back in.
Anyways onwards and upwards! I had a pretty good weekend otherwise. I spent most of it at home and I did some shopping with my mum on Sunday. I got most of Hubby's Christmas gifts and some gifts for my self as well ;) I'll post some pics soon.
I lost a total of 8.6 lbs last week. Which is crazy! I'm still on the detox and I'm feeling good. I might keep it going for another week or two. You can't argue with the results.
I've also been walking my dogs twice a day for 20-30 minutes. I didn't want to get into anything crazy for the first week, since my body is heeling from the "problems". I'm starting some more intense workouts this week and I'll continue walking until its so cold out I can't stand it!
This is what I whipped up for dinner. I sautéed a half a large red onion in olive oil, italian seasoning and garlic. Added red peppers, Cremona mushrooms, tonnes of spinach and tomato. It was pretty good! Kind of like the inside of a fajita, but not lol!

Progress!
Hello
Darlings!
Quick
post on how the juice cleanse/detox is going. First of all, I feel FAB! There
is really something to this whole juice/vegan lifestyle. Now I’m not saying I’m
now a vegan, but I think I’ll be eating a lot more vegan dishes from now on.
I’ve
had no headaches. This is a big deal people. I’m a migraine kind of gal. I
usually have a migraine at least once a week and they last for 2-3 days. Ya, I
know. I’m always taking pills trying to make the pain go away. Sometimes they
work, sometimes they don’t. My poor liver. So for me to go from Saturday to
Thursday without a migraine is an amazing feat.
My
skin has started to clear up. For the last 2 months or so, I’ve had huge cystic
acne all over my chin and jaw. Plus the rest of my face was covered in your
regular type zits. Then there is my neck, chest, back and shoulders –covered. I
looked like I had chicken pox or some sort of serious affliction. In 6 days, my
face is about 90% clear and the rest of me is about 50-60% clear. I’d say that
is a huge improvement. I’m super pleased.
Last
but not least I’ve lost some weight. Right now, it’s about 6lbs. I’ll weigh my
self on Saturday to get the results for the week. FANTASTIC.
It’s
so rewarding to see fantastic results. I’m definitely keeping this up. I can
only imagine how much my organs are loving me right now. Clean out all the crap
in your organs and your body can heal anything.
Tonight for dinner I had a home made tuna burger made with
flax instead of bread crumbs. I served it on a bed of chopped kale, with
avocado and tomato. For a dressing I used fresh lime juice, sea salt and
pepper. It was ok. Not my favorite, so I’m not going to bother posting the recipe.
I like the idea of the salad, so I think next time I’ll use spinach instead of
kale.

Dinner Tonight- Veggie Stir Fry!!
As part of
my detox, I’m having fresh fruit and veggie juice and then a vegetarian meal
for dinner. Tonight was veggie stir fry! This is so good! Hubs and I actually
made this on Sunday night as well haha!
This is
full of fresh veggies, antioxidants, fiber and yummyness. You are going to love
itJ
Here is
what I put in it. Keep in mind that I didn’t measure anything. So just throw
whatever you have in whatever amounts you like. I like some spice to it, so I
put quite a bit of Sriracha and Chilli paste.
Red Onion
Chopped
garlic
Green onion
Celery
Red and
yellow peppers
Baby Bok
Choy
Bean
Sprouts
Enoki
mushrooms
Snow Pea
sprouts or Kale. We used snow pea sprouts on Sunday and Kale today. I preferred
the snow pea sprouts, but Kale is really good for you.
Lemon juice
Low sodium
soy sauce
Hoisin
sauce
Sesame oil
Ginger
paste
Sriracha
Chilli
paste
Salt
Pepper
Rice
noodles
Chop up all
the harder veggies (onions, garlic, celery, peppers) and throw in your frying
pan with the sauces and seasonings. Cook for a couple of minutes. Then throw in
your bok choy. You will have to add more of the sauces as the veggies start
piling in. In the meantime start boiling the water for your rice noodles.
Cook the
veggies for a few minutes until the bok choy starts to cook down, throw in your
mushrooms, and then the kale or snow pea shoots. These cook down pretty quickly.
Your water
should be boiling, add your noodles. These noodles cook really fast so you don’t
need to leave them for very long.
Add your bean sprouts to the veggies. Drain
your noodles and add them to the veggies. Toss and enjoy!

Detox Bath
As part of my new take on health, I’m detoxing inside and
out. Tonight I tried a detox bath. This type of bath dates back many many
years. It’s supposed to help the body eliminate toxins and absorb minerals and
nutrients.
If you know me on a personal level, you know I hate baths
and that is why Terrill has the bathroom with the huge tub. I prefer a nice
shower. However, I’m trying to change my ways and I think this is a good step
towards all over health.
You need a couple things to turn a regular bath into a detox
bath. The first thing you need is about 1-2 cups of Epsom Salt. Soaking in
Epsom salts actually helps replenish the body’s magnesium levels. The sulfate
flushes toxins and helps form proteins in brain tissue and joints.
Next you will need is 1-2 cups of Baking Soda. Baking soda
is known for its cleansing ability and even has anti-fungal properties. It also leaves skin very soft.
You can also add things like tea bags, essential oils, dried
herbs or even ginger.
Make sure the water is nice and hot and you will need about
40 minutes. It takes the first 20 minutes for the toxins to leave the body and
the final 20 minute for the magnesium to be absorbed. Also do not use soap or
anything like that until the end. It counter acts the benefits.

I’m Back….!
Hello my lovelies!
It’s been what seems like forever since I have written. I
had to take a bit of a hiatus due to some crazyness that happened in my life. I
will possibly write about this later, but right now I’m not in the right frame of mind
to talk about it.
This past weekend I started a juice cleanse to help me detox
after my recent issues. My body feels and looks polluted. That is possibly the
best way I can describe it. I gained a bunch of weight, my skin looks/is
disgusting, my psoriasis is acting up and I just have an overwhelming feeling
of BLAH.
If any of you have ever watched “Fat, Sick and Nearly Dead” on
NetFlix, you would know how amazing a juice detox is. If you haven’t seen it,
please watch it. These two guys are crazy awesome and changed their lives for
the better. The main juice I’ve been drinking is the “Mean Green” from the
documentary.
Saturday morning I woke up to the sound of the juicer going.
My handsome hubby was hard at work making me (and him) a few days worth of
fresh fruit and veggie juice. My plan is that for the next 14 days, I’ll have
this juice throughout the day and then have a small, clean, healthy dinner.
The juice is pretty simple, easy to make and it packed full
of vitamins and good stuff to help your organs do what they need to.
So what’s in the juice? Kale, Celery, Cucumber, Granny Smith
Apple, Ginger, Lemon. There are a few other juices we made so there is variety.
Another one is Cranberry, Blackberry, Clementine, Lime. This one is soooo
bitter and sour lol. I have to mix it with the Mean Green! We also made a Carrot,
Apple one that is soooo yummy. Just throw whatever you have in the juicer and
off you go!

The Incredible Shrinking Me
Wow down 5.2 lbs! First week went really well! Just goes to
show that you can still loose even when there is a holiday! If you want to see

What I Ate Today – Oct 7 Thanksgiving
Two days in a row of not really having an appetite. Until
dinner that is. Holiday dinners are my
favorite and you can’t say no, especially when it’s Thanksgiving. It’s hard not
to eat all the amazing food that we are so lucky to have. So I did.
Here is what I ate:
Breakfast – Water
Lunch – Cheese chips(recipe here), salsa and sour cream
Snack – Bowel of home made soup that Cheryl (mother in
law-ish) made
Dinner – Turkey, gravy, roasted potatoes (recipe coming soon),
roasted parsnips, carrots, stuffing, 2 white dinner rolls, water, pear cobbler
and whipped cream for dessert.
Snack – Another piece of pear cobbler.

Ok, this is seriously delicious. Like lick the plate good. I
made this today for Thanksgiving dinner at the in laws. It’s crazy easy and
involves about as much work as sitting on the couch watching Netflix. The in
laws, hubby and the rest of the fam loved it! They said it was rich and
buttery. They didn’t expect it to be as light as it was.
The original recipe was a bit different from what I did. The
original recipe is here. I didn’t have any canned peaches or yellow cake mix.
So I used what I had. I had canned pears and Butter Pecan cake mix.
What you will need:
1 Large can of pear halves or peaches
1 Box of butter pecan cake mix. Vanilla would work here as
well.
2 Sticks of butter – melted. The original receipe called for 1 stick of butter
Preheat your oven to 350° F. In a glass baking dish, empty
the can of pears. Do not drain the fruit. I cut the halves into 4 or 5 pieces
and placed them all over the bottom of the dish.
Next empty the dry cake mix onto the pears and cover the
pears evenly. Melt the butter in the microwave and then pour it over the cake
mix. Bake at 350° F for about 50 minutes.
I made some whipped cream and served that on top. I always add
a little vanilla and sweetener when I make whipped cream. You want to whip the
cream until it stands up on its own.
It’s that simple folk!
P.S I wish I had taken better/more pictures. I have this bad
habit of forgetting until the food is already done:(

What I Ate Today – Oct 6
Today was a lazy a little hung over kind of day. I have literally been on the couch since 8am watching Netflix. I have now finished the first 3 seasons of Sons of Anarchy and the first 2 seasons of Walking Dead. Great shows btw.
Here is what I ate:
Breakfast – Pop corn, couple pieces of bacon
Snack – Water
Lunch – Home made fruit and veggie juice
Dinner – Tuna melt with cheddar cheese on Weight Watchers

Kind of a lame food day, but I honestly haven’t been hungry.
Could be because I have expelled ZERO energy today lol.

What I Ate Today - Oct 5
Today was a weird food day. When you are low carbing it, and you don't bring your lunch, your options are slim. Salad. Boo. I'm not a huge fan of salad. We are definitely not friends. I keep trying to like it, but it's just not happening.
I resort to wraps when I'm out and about (if I can't get a steak or a burger no bun). Although they are still carbs, they are better than bread or buns. If its a large wrap, I'll rip off the excess that I don't need. Plus you can load them up with lots of veggies.
I do buy low carb wraps from Low Carb Canada. I buy the Mama Lupe's Tortillas. They are 3 net carbs and you get 10 for $4.59. They are more expensive than regular wraps, but you gotta do what you gotta do. I will alternate between the low carb and regular ones for economical reasons. I did just find these wraps on Netrition.com for almost $1.00 cheaper! I'll try getting them from here next time.

Breakfast - Rest of my Club Wrap from Swiss Chalet and a little Chalet Sauce
Snack - Water
Lunch - Egg salad wrap
Snack - Diet Coke
Dinner -Chicken with salsa, cheese and sour cream
Snack - Pop corn, and Malibu Rum punch

What I Ate Today – Oct 4
Ugh I’m so tired today. This damn cold won’t go away! I feel
like it’s a little demon hiding out in my body. I might need an exorcism.
I don’t have school
tonight so I am chilling out on my couch and watching the rest of Rescue Me and
I will go to bed at 9pm like a looser.
Here is what I ate today:
Breakfast – Glass of milk, handful of vitamins, 3 sausages,
2 poached eggs, HP and Get Lost Tea.
Snack – Banana and Laughing Cow Cheese
Lunch – Small whole wheat wrap with ham, tomato and mustard,
green grapes
Snack – Peanut butter and 5 chocolate covered almonds. A kid
was selling them and came to my door! What was I supposed to do?!
Dinner – A couple bites of Club Wrap from Swiss Chalet
Lovely Finds
My Mum is awesome. She really is. My mum is a huge thrifter/garage
saler. She heads out to all the Charity shops every Saturday with her partner
in crime, Annette.
These ladies have some serous talent for amazing finds. Not
to mention dedication. I myself love a thrift store, but I don’t have the
patience to visit religiously. My Mum always comes home with really cool and
useful things and most are under $4.00!
Thrifting has always been huge with my Mum. Ever since I was
a baby, she trifted. She bought ladies clothes because she liked the fabric,
then cut them down and make me cute little outfits. Since she was single mother
of a child who loves clothes, this was how she made it work. She always said “5
cents is 5 cents. Its better in my pocket than in someone else’s.” And it’s
true. It’s actually become one of my mantras.

What I Ate Today – Oct 3
I was pretty hungry today so I ate a bit more than usual, including the Aero chocolate bar and bag of Lays chips my
work handed out. I put them in my desk drawer hoping to forget about them.But I didn't.
I’m feeling a bit better today. All that seems to remain
from my cold is the stuffy nose, cough and the desire to sleep and lay on my
couch all day.
Here is what I ate:
Breakfast – Get Gorgeous Tea (post to come), 2 sausages and
2 scrambled eggs with HP. Care of my cafeteria at work :)
Snack – Laughing Cow Cheese and a small whole wheat wrap
with a small amount of ham, tomato and mustard.
Lunch – A Healthy Choice frozen meal. It was the Roasted
Beef Merlot one. That is really the only one I ever buy. It’s actually pretty
good! It has beef, carrots, green beans and small red potatoes.
Snack -Home made fruit and veggie juice that Terrill
made. This one is mostly fruit I think.
Dinner -Tuna on a whole wheat wrap from Mr Sub.
I’m slightly obsessed with the tuna wraps from Mr Sub. It
was a late dinner 8:30pm. I grabbed the wrap after my class had finished and
ate it on the way home. It made the long drive on the 401 a little more tasty:)

What I Ate Today- Oct 2
Today is one of my busy week days. Work and school. Oh and lots of driving.
Every Tuesday and Wednesday until the beginning of November. I get up at 6am
and get home around 9pm.
Oh, I also weighed my self yesterday morning but forgot to take a picture. Sad. 200 lbs on the nose :(
Here is what I ate today:
Breakfast - Green tea, 2 sausages, 2 eggs scrambled) and HP sauce (it’s an English thing)
I also drank a lot of water and went for a walk on my lunch break for about 35 mins.

(post to come soon) This one is green…Kale, celery, apple and I’m not sure what
else.
Snack – Diet Coke, 1 piece of left over pizza from last night (seen here)
Dinner – Home made spaghetti sauce that Terrill made with ground turkey, peppers, onions and spinach. No pasta :)
I also drank a lot of water and went for a walk on my lunch break for about 35 mins.

What I Ate Today
Ok, Ok I’m gonna own up to my diet deviant ways. I’ve been
eating…a lot…of bad things…and drinking…bad things.
I’m paying for it now. I came down with a cold, a brutal,
nasty, ass kicking cold. Achy, tired, sore throat, yucky cough, snot, so much
snot. I think that if I had been eating properly then maybe I wouldn’t be sick…?
Not only was I feeling shitty, but I looked shitty. My skin is dry, my lips are
chapped and I’m breaking out. Not cute.
The only way I seem to keep on the straight and narrow (diet
wise) is to log my food here for everyone to see. So here it is.
What I ate today:
Breakfast – 2 sausages, 2 poached eggs, low sugar OJ, a hand
full of vitamins and a green tea
Snack – Water, Laughing Cow cheese, banana
Lunch – Cauliflower broccoli cheese soup (recipe), home made super juice. Terrill made this, I'm not 100%sure what is in it. It tasted like grapefruit, raspberries, apple and spinach
Snack – Peanut Butter
Dinner – 1 slice of low carb pizza (recipe)

Hello Darlings!
Quick post about what I made for dinner tonight. It’s
cauliflower pizza. You can see my recipe here. Today was a bit different
because I had caramelized onions, sautéed spinach, artichokes and tomatoes. It
was divine:)

Crack Potatoes
Hello Darlings!
We had an “End of Summer” potluck last night and it was a
great night!! We had about 15 or so of our dearest and closest here to
celebrate the beginning of fall.
As per usual we had some seriously great food. Let me tell
you my boys and girls can COOK! There was ribs, chili, deviled eggs, a few
different pasta salads, cheese cakes, chocolate cake, bean salad and I made
something called Crack Potatoes.
These potatoes are fantastic and ridiculously easy. I found
the recipe on Pinterest – of course.
Here is what you need:
2 bags of shredded potatoes. I got mine at Walmart in the
salad section
2 tubs of sour cream
2 bags of real bacon bits or you can cook your own bacon
2 packets of dry ranch dressing
½ a block of old cheddar cheese (grated)
Preheat your oven to 400° F. Mix all of the ingredients
together excluding the potatoes. Once mixed, add the potatoes and spoon into a
glass baking dish. Bake at 400° F for 40 minutes.
